Pink Beets Pesto

Enjoy this light pesto delight - with wholegrain pasta to make it extra healthy! Or spread it on your fitness bread (pumpernikel) with fresh cucumbers!

Easy Recipe

1) Cut beets in big pieces and boil until a fork can cut through easily. Don't peel for the cooking

2) Once cooked, let cold water run over it and let lit until cooled down

3) Peel beet pieces and place in blender

4) Blend together:

  • 3-4 garlic gloves

  • small handful of pine nuts

  • sea salt / fresh pepper

  • one big chunk of Parmesan cheese (or goat/ feta/ or pecorino romano)

  • Big pieces of cooked beets

  • 1/2 cup (or 3/4 cup) of olive oil (or less, if you are not an olive oil lover)

Serve freshly over hot wholewheat pasta! Add some additional Parmesan and fresh pepper to make it look super delicious:)

Extra tip: Save a little cup of pasta water - to smoothen up the consistency:)
